ONE FOURTH drained oil packed sun dried tomatoes from an Italian Section of your favourite market
1 large egg
1 tbslp minced garlic
one and a half tsps Dijon French Mustard
one and a half tsps of fresh squeezed lemon juice
three quarters cup extra virgin olive oil
salt to taste
white pepper to taste
Finely chop or mince the sun dried tomatoes in a food processor or blender. Add the egg, garlic, mustard and lemon juice and blend well.
With the Food Processor or Blender, add the olive oil through a feed tube slowly and blend until thick and smooth. Season with salt and pepper and chill for an hour.
